For the third year in a row, Food Sweet Food in collaboration with UNHCR and Athens Insider co-organize the Refugee Food Festival.
We participate by opening our kitchen for two days to Iraqi chef Adel Al Ahmad who is promising to guide us through the culinary tradition of his country. Iraqi cuisine has a history going back thousands of years, to ancient Mesopotamia where the oldest scriptures pertaining to a cookbook have been found. Having received influences from Syria, Iran and Turkey, modern Iraqi cuisine is filled with oriental aromas and spices.
Here is what Adel has been preparing for you:
IRAQI SOUP
Chicken, saffron, ginger, corn and vegetable sprouts
SALAD
Lettuce, plum tomato, green apple, cucumber and black sesame
GRILLED SEA BREAM
with cauliflower, zucchini, lime, cumin and chili pepper
LAMB BΙRΥIANI
Lamb shank, saffron-and-cardamom perfumed rice, raisins and pine seeds
BAKLAVA DESSERT
Caramelized phyllo dough with spices, green-kernel Greek pistachio and cardamom ice cream
